Diet Soda Mystery Cake
Just take a box of cake mix, and INSTEAD of adding the eggs, oil, water, etc., that the box tells you to add, just mix with 1 can of diet soda, and then bake according to box directions (or until a knife inserted into the center comes out clean). That's it!
You can do the same with brownie mix as well. Diet cream soda and diet lemon-lime soda both work GREAT with yellow and white cakes, as do fruity diet sodas like black cherry and orange.
Here is a turkey recipe that also includes the use of popcorn as a stuffing -- imagine that. When I found this recipe, I thought it was perfect for people like me, who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try.
1- 15 lb. turkey
1 cup melted butter
1 cup stuffing (Pepperidge Farm is best)
1 cup uncooked popcorn (any brand)
Salt/pepper to taste
Preheat oven to 350 degrees.. Brush turkey well with melted butter salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven.
Listen for the popping sounds. When the oven door blows open and the bird flies across the room, it's done.

I don't know about the diet soda part, but I have made box cake recipes with strawberry soda rather than water and they do taste awfully yummy and just like strawberry. Goes over well for cupcakes too. :)

ReplyDeleteI have been MIA this week. I was hoping to finish a baby quilt I'm working on to give to my son tomorrow, but that's not going to happen. Today I've been prepping everything for tomorrow and also baking the pies. Tomorrow I'll just have to put the casseroles and turkey in the oven and make the hot rolls and mashed potatoes and gravy.

ReplyDeleteThat diet soda recipe is nothing new around here. They turn out great, though a little more dense than a regular boxed cake mix. Very moist. As a matter of fact, my husband just bought an orange cake mix and diet orange soda. Use your imagination for several different variations!
