Blue is the "new" summer color--in particular, aqua blue. Since we are (ahem!) always in style, Johnny and I are seen here sporting our new aqua blue shirts.

The occasion is our 52nd wedding anniversary on July 7th. Yes, although I am only thirty-five years old, I have been married fifty-two years, and THAT is a big number! (Hey, I can pretend!) If you're interested, you can see our story here and here.

We celebrated with dinner at a local restaurant with family. Jane came all the way from Pennsylvania and made my favorite cake--a yummy coconut cake--made exactly like my mother used to make it! It's a yellow cake with white icing, which is of course, homemade. None of that canned icing! I'll give you the easy recipe.

Butter Icing
½ stick butter, room temperature and creamed
1 tsp. vanilla
couple shakes of salt
Mix with electric beater until fluffy, then alternate
1 lb. 10x confectioner's (or powdered) sugar with enough milk for spreading consistency.

Ice between layers and press on a thick layer of Baker's Angel Flake Coconut. Ice the sides and top and press on a thick layer of coconut. Enjoy!
